Ingredients
Nutrillet Pearl Millet (Bajra)- 1/2 cup
Tomato (diced)- 1
Cucumber (sliced) - 1
Bell pepper/ capsicum (diced) - 1/2
Onion (sliced)- 1/2 [optional]
Arugula/ Rocket leaves - 1 cup [optional]
Coriander- for garnish. Basil can also be used.
Dressing:
Olive oil- 2 tablespoons
Juice of 1 lime
Honey- 1 tsp
Dried oregano- 1 tsp
Salt & pepper to taste
Preparation
Wash and cook the pearl millet (bajra) in 1 litre of water till it is soft to touch.
Meanwhile, chop the cucumber, tomato, onion, coriander and bell pepper.
Mix them all together in a large bowl.
Mix the dressing together and add to the salad just before serving to avoid sogginess.
